Cilantro-Lime Dressing
This dressing makes a great topping for a crisp green salad, a bed of greens topped with grilled or roasted veggies, or a blanched vegetable salad. For one-dish dining, add some cooked fish, poultry, beef, bison, or lamb to the green salad before or after dressing.
My note: The recipe info says “makes 4 servings.” I thought it made 8 to 12 servings (1/4 cup of oil per serving would be a lot of oi per person!).
Ingredients:
1/4 cup cider vinegar (I use Bragg's raw apple cider vinegar)
juice of 1 lime (use 2 if they're small)
1/4 cup cilantro, leaves removed and finely chopped (double for a thicker dressing )
1 teaspoon [finely ground, unrefined] sea salt (I use Celtic Sea Salt or Redmond Real Salt)
1 teaspoon ground pepper (I used black; white pepper also works)
1 cup olive oil (I used extra virgin)
Mix all ingredients except olive oil in a food processor. (I used a Vita Mix. A blender would also work.) With the machine running, add oil slowly down the feed tube until emulsified.
My notes: I poured the dressing into a wide-mouth glass jar before refrigerating it.

This is lovely, thank you so much! I was vegetarian (and vegan and raw foodist for some years) for the majority of my life and at the start of 2011 I found out I was gluten-intolerant, had PCOS, and later grain, bean and dairy sensitive...all before I turned 21! It definitely has been a life altering experience. I've always cooked for myself as a vegetarian, but learning how to cook meat/fish (and grain/bean-free etc) has been an adventure. I'm slightly obsessed with recipes/cooking/nutrition, and this book would be so helpful on the new path I've started. Thanks again! :)

Hi Chelsea
You've come to the right blog! I regularly make and write about other people's books and recipes. I was into macrobiotics for 13+ years (vegan for 9 of those years). Veggies and fruits make up the largest volume of my diet and have for more than 20 years. I find cooking fish, fowl, and meat takes less time than when I soaked and cooked whole grains, made bread, etc.
I hope you'll check in regularly to see what I'm posting. I'm happy to answer questions about my posts and recipes I put up.

Hi Rachel!
I'm thrilled to have found your website! I actually also live in Arizona, which I find ironic. I have already added you to my favorites and started looking at old posts and recipes etc.
My grandfather (and father to an extent) was highly into macrobiotics and I also dabbled in it for a few years. I appreciate this learning process I've gone through and I feel so lucky that I discovered the paleo way of eating so early on in my life, I don't want to do any more damage to my body!

I believe strongly in a gluten- and grain-free diet (I have a blog devoted to this lifestyle, in fact). This book would be a fantastic addition to my cookbook collection, not to mention a wonderful Christmas gift.

Hi I would like to win a copy of the book because I have been trying to follow this lifestyle for a year now and am having trouble finding the right fit for me. I have gained 4kgs not lost any weight and am trying hard to not only eat right but to loose those kilos and its not happening, even though I exercise most days of the week.
I also have a family so I'm trying to cater for everyone's needs. This book is exactly what I need to help me along the way:)

What a great giveaway. As a newbie to paleo, I try to read as much as I can about it. It's been a challenge to forego wheat, grains, legumes, etc. but as time goes on, the desire lessens. Eating this way is more filling and gives me more energy. It's a win-win situation.

I saw your post about the give away on Facebook and I couldn't be more excited. After taking your classes through SWIHA, I've really started trying to follow a more Paleo sort of lifestyle of late. At the end of October, the importance of cutting processed foods out of my diet became more and more important when I began suffering from debilitating migraines. I've also started showing early symptoms of MS, but so far, but changing my diet and exploring a healthier lifestyle, I've noticed a decrease in both the headaches and some of the other symptoms, so I couldn't be more excited about exploring this book, to go along with your books as well!

I've been a follower of your blog for a while after finding it when I purchased The Garden of Eating several years ago. I've listened to some podcasts of the Paleo diet and am intrigued by it. Especially being a nutrition major, knowing the the current american diet is poor, to say the least I like to keep myself educated on better ways/options of eating to present to people.
Thank you for posting all the ways to enter. I never knew there was a youtube channel. I'm looking forward to watching the videos during my college break.

I have been a collector of cookbooks since I was a kid. Unfortunately many of them now are collecting dust, as they are full of grains and sugar. I would love to start adding books that I can reference on a daily basis!
