I am commenting about one of the youtube videos. I watched the video where you show how to parboil veggies. We eat TONS of broccoli using this method. It works so nicely to create a pleasing end product. You are right on when you say that this turns non vegetable lovers into veggie lovers! I think the video is very nice for those who need to see it all in action, once, to understand what it means to parboil and shock the veggies. Plus it is just so nice to see and hear you, too! The videos are a great addition to your books and site!

Favorite Recipe by Elana - my favorite recipe by Elana is her mock tapioca pudding, made with chia seeds. It is not one of her "almond flour" recipes, but it's a great taste, texture and fabulous use of the chia seed. When I make this, I do change it up a bit (I use coconut milk, which creates such a yummy flavor) and stevia/honey blend for sweetener, but this is a house favorite!

Hi Chef Rachel! I've just happened upon your blog and am finding it to be a great resource. And how nice that you are holding a "raffle" for a seemingly awesome book!
Presently, I am obsessed with the idea of making Elana's Double Chocolate Mocha Biscotti (of course). A local cafe makes something very similar and I must figure out how to make my own!
I don't believe that the recipe is provided in her cookbook, but it is on her site.

I would love to make ginger macadamia brownies. I always try to make different types of brownies whenever I find interesting recipes. Ginger and macadamia nuts are my top favorite ingredients. By using almond flour, it sounds really yummy. I am really anxious to make it.

I've started experimenting with almond flour and coconut flour, and I'm eager to try this chocolate cake recipe: http://g-ecx.images-amazon.com/images/G/01/books/promos/Chocolate_Cake.pdf (Note that the table of contents wasn't available for viewing on Amazon.com, just 3 recipes in PDF format.) I want to try the pancakes also, as I tried another almond flour recipe that didn't work. I will find substitutes for agave nectar, however, that stuff is like HFCS. I may try the salmon burger recipe with canned tuna. Thanks!

I'm definitely trying these sesame crackers. I've been experimenting with various cracker recipes (mostly of my own creation), and while they've all worked more or less, I haven't felt like I've totally nailed down what I'm aiming for. These look close:

Hi Michelle,
If sounds like you checked out the scone recipe in Elana's book (she wrote the Almond Flour Cookbook). My cookbooks don't have any scone recipes. I have never replaced almond flour with grain flours; the recipe might end up dry and you may find you have to add more fat to keep it moist.

I agree with you. If a recipe calls for agave nectar, I substitute honey. I'm aware of the hazards of agave nectar. You can read a bit about that on one of my recent posts "Another Look At Agave Nectar."
